Built from AEBL steel with a satin finish, this blade delivers exceptional edge retention and corrosion resistance—ideal for both professional kitchens and serious home cooks. Hardened to 61-62 HRC, the blade maintains a razor-sharp edge through extended use while remaining durable enough for daily work. The 50:50 double bevel geometry provides balanced cutting performance across a wide range of tasks, from fine slicing to robust chopping. At 8 inches of cutting edge, this chef's knife offers the versatility of a full-sized workhorse in a slightly more nimble package.

The carefully proportioned blade—measuring 2.21" from heel to spine—delivers excellent food separation and comfortable rocking motion. **DO NOT put in Dishwasher. DO NOT soak in water. Hone with fine ceramic rods or strop. Make sure to wipe the blade often and keep dry at all times. Patina (discoloration) of the handle is normal and will darken the handle over time.
