Mcusta Zanmai’s Hybrid series, like Hybrid Splash but without the Damascus, offers a couple of pieces unique to it that Perfect Edge loves and wants to include into the Hybrid Splash array. The overall aesthetic remains and the grounded performance is geared toward professional and home chef use. Instead of the cladded blade, Hybrid is a monosteel VG10 knife for reliable performance and low upkeep.
The handles are from a traditional Wa starting point, but round out halfway down toward the end, making for a familiar feel and simultaneously, a gripping experience.
This Honesuki, or traditional Japanese boning knife, while extremely versatile like a petty, really cuts to the bone - or at least dexterously around it! Meant for nimble use to debone, quarter, cut, and trim through meat and fish; you will find very few comparisons to this special piece. Its specialty profile also allows to be seconded as a great prep knife.
