This steel is designed for fast restoration of very dull knives. A staple tool for butchers and cooks so they can quickly return a working edge to a knife that has missed regular honing maintenance or encountered small chips on the job.
NOTE: This is an aggressive abrasive that can do more damage than good IF used improperly and should be avoided on the use of finer edges, common in Japanese knives.
