A paring knife is the smallest knife in a kitchen for, of course, the smallest jobs. 

Strictly speaking paring means trimming around the outside. These type of techniques and the tools used, although various in the professional trade, are hand-held jobs. Peeling, for example, is the most common example; but, turning a strawberry into a flower, is another more crafted example.
